Doughnut Kitchen 

A couple weeks ago, I was graciously invited to photograph the very first bricks-and-mortar store for American Doughnut Kitchen, a Melbourne institution that's spent the last seventy years travelling the city in its iconic caravan. While the original is still parked at the Queen Victoria Markets, ADK's new venue is located in the courtyard of the Prahran Markets, where their expanded production kitchen sees them rolling, proving, cutting, frying and filling their classic Bombolini-style jam doughnuts to the very same recipe used back in 1950.

Despite arriving days before the official opening, Prahran punters were already going wild at the very thought of hot jam doughnuts, creating a queue out the door for the piping pastries we used during our shoot.

Of course, these molten beauties are served alongside their natural accompaniment; steaming coffee from local roaster Code Black. While ADK has been sticking to the traditional recipe for the time being, in the near future they plan to bake some small-batch single-origin doughnuts in collaboration with some of Prahran Markets sterling stallholders. Cheese and Mushroom Doughnut, anyone...?
